Healthier Chicken & Vegetable Stew

  • What you need:

    • 2 tbsp olive oil  
    • 1 diced onion  
    • 2 diced celery stalks  
    • 2 diced carrots  
    • 2 cloves of garlic, pressed  
    • 1 cup sliced cremini mushrooms  
    • 1 tbsp diluted tomato paste (mix with a bit of water)  
    • 320 ml water  
    • Spices: ½ tsp each of dried marjoram, rosemary, and paprika; ¼ tsp dried sage; a pinch of cayenne pepper; salt and black pepper to taste  
    • 1 bay leaf  
    • 225 g skinless, boneless chicken breast, cut into bite-size pieces  
    • 1 tsp cornstarch mixed with a little cold water for thickening  
  • How to do it:

    1. Heat olive oil in a stockpot over medium-low heat.  
    2. Sauté onion, celery, carrots, and garlic until onion is translucent, about 10 minutes.  
    3. Add mushrooms; continue to cook until tender, about 5 minutes.  
    4. Stir in tomato paste, spices, and water. Add chicken.  
    5. Bring to a boil, then simmer on medium-low for 40 minutes or until chicken is cooked through.  
    6. Thicken the stew by adding the cornstarch mixture. Bring to a boil and cook for an additional 5–10 minutes until thickened.  
    7. Serve warm and relish the hearty yet light flavours.
