  • What you need:

    • 960 g rhubarb, chopped and trimmed
    • 600 g sugar or your preferred sweetener
    • AquaTru purified water, adjust amount to taste
    • 3 tbsp grated lemon zest
    • 360 ml fresh lemon juice
  • How to do it:

    1. In a saucepan, combine rhubarb, sugar, and 500 ml AquaTru water. Heat to a gentle boil, then simmer for 10–15 minutes until rhubarb softens.
    2. Press the cooked rhubarb through a sieve into a jug to extract all the juice.
    3. Add lemon juice to the rhubarb extract.
    4. Dilute to taste with more AquaTru water, adjusting for tartness.
    5. Refrigerate until chilled and serve over ice for a refreshing drink.
